A group of friends - Will Horowitz, Cam Dobranski, Justin Leboe and Stefano Marcelletti - came to visit us in early January while we were building Merida Space. We introduce them to some of our partners. Oscar, Luis and Hector are behind Ad Naturam which is an organic produce grower company located in the Yucatan Peninsula with a strong commitment to sustainability, social responsibility and rural development. This is incredible project combines organic farm practices, permaculture design and rural development. Inspired through the seventh edition of Cook It Raw in the Yucatan, we moved from Copenhagen to Merida in 2015 and quickly began to create a new project: Merida Space
. It was a natural move—following our desire to settle in an environment where cuisine is considered a cultural model comprising farming, rituals, age-old skills, culinary techniques and ancestral customs. Recognized by UNESCO as an intangible heritage, Mexican cuisine still embraces the idea of a collaborative society where the connection between those planting and harvesting the food to those responsible for preparing and cooking, is crucial.
Now with Merida Space
, we are reaching out to the global and local communities to support the fledgling organic movement in Yucatan and foster synergies between visiting chefs, local producers and local families. This food hub will focus on the production of nutritious, accessible, and affordable food available to everybody. Through collaboration with local organic farmers and chefs Merida Space will incubate innovation from producing to distributing and selling food.Contact: firstname.lastname@example.org
